Chili Crescent | 香辣包

Ingredients | 材料 :

(A)
250g  Bread flour | 高根麵粉
  25g  Sugar | 糖
    4g  Salt | 鹽
    6g  Yeast | 酵母 (依士)
  40g  Warm water (retain 10g and adjust) | 暖水 (留起10g水, 需要才用)
  90g  Milk | 鮮奶 (室溫)
  50g  Egg | 雞蛋
  50g  Prefermented starter | 麵種

(B) 
  20g  Unsalted butter | 無鹽牛油 (室溫,後下)

(C)
Filling | 餡料 :
1g dried chili (or fresh chili, unseeded & chopped | 乾辣椒 (或去籽鮮指天椒, 切碎)
1g crushed black pepper | 黑胡椒碎
40g Smoked beef bits (or cooked bacon bits) | 煙黑椒牛肉 (或熟煙肉)

  1. 依士放入溫水中拌勻。 
  2. 所有(A)其他材料放入攪拌盆,加入依士水用手攪勻,搓揉麵糰。分2~3次加入(B)牛油,搓成軟滑麵糰。放入(C)餡料再搓揉至完全融合。放在已塗油的盆中,蓋上保鮮紙放溫暖地方待發酵約45分鐘,取出,分割成8等份。
  3. 把小麵糰做環形,放在已塗油的焗盤,蓋上保鮮紙放溫暖地方,作最後發酵約30分鐘約大1倍。
  4. 包面灑上高根麵粉,灑清水後放入已預熱至200°C的焗爐內,烘焗約10分鐘取出。
  1. Dissolve yeast in warm water.
  2. Put other (A) ingredients in a bowl, add yeast water and knead to a dough. Add (B) butter in 2~3 portions and knead to soft and elastic dough.  Add (C) fillings to dough, knead until mixed. Put dough in a lightly oiled bowl. Cover with plastic wrap. Ferment in a warm place for 45 minutes. Take out and divide into 8 equal portions.
  3. Knead each lump to a circle shape. Place on home baking tray with home baking parchment, cover it with plastic wrap, for final fermentation in room temperature around 30°C for about 30 minutes until double in size.
  4. Sprinkle flour on bread top, squirt with little water. Bake in 200°C preheated oven for about 10 minutes. Remove from oven.

*Tips | 心得 :
  • 可多加些辣椒乾碎,增加辣味!
  • Add more dried chili to boost the spiciness!!
