Ingredients | 材料 :
  • Yield: 6 numbers | 6個
210g  Bread flour | 高根麵粉
  40g  Cake flour | 低根麵粉
  15g  Brown Sugar | 黃糖
    3g  Salt | 鹽
    3g  Yeast (red label) | 酵母 (紅依士)
160g  Warm water | 暖水
  10g  Unsalted butter | 無鹽牛油 (室溫,後下)

Fillings | 餡料材料 :
3~6 slices parma ham | 巴馬火腿 3~6片
6 pieces cheese | 芝士片 6片
200g Pumpkin | 南瓜 大概6兩

  1. 焗爐先以220°C預熱。
  2. 基本麵糰搓揉,第一次發酵方法及分割麵糰,參照基本麵糰製作
  3. 將發酵完成的麵糰分成6個等份,蓋上保鮮紙鬆弛10分鐘。
  4. 麵糰放在撒了根粉的枱上,輕輕拍出空氣,切口往內包,用手心輕輕將麵糰滾成圓形。放在已經塗油的烤盤上,蓋上保鮮紙,放在溫暖地方進行最後發酵大概45分鐘至兩倍大。
  5. 包面撒上高根麵,放入已預熱的焗爐並調至上火210°C,下火200°C,烘焗大概10~12分鐘或至金黃。取出放架上稍為待涼。
  6. 南瓜去皮厚切隔水蒸熟,抹去多餘水份,稍為待涼,灑小許生粉,輕煎兩面至金黃。
  7. 麵包切半,放上巴馬火腿,芝士片,煎至金黃的南瓜片,南瓜剛煎好的熱力把芝士片弄至半熔狀態最是美味!

  1. Preheat oven to 220°C.
  2. Basic dough kneading, first fermentation and dough cutting, refer Basic Dough.
  3. Divide the fermented dough into 6 portions, cover with a plastic wrap and let rest for 10 minutes.
  4. Press the dough lightly with your hand to squeeze the air out. Fold it into the centre and shape it into a ball-like shape. Put on baking tray with baking parchment, cover it with plastic wrap, for final fermentation for about 30 minutes in room temperature around 30°C until double its size.
  5. Sprinkle a little bread flour on top of each dough. Bake in preheated oven and adjust it to 210°C upper heat, 200°C lower heat, bake for about 10~12 minutes or until golden. Remove from oven and cool on rack.
  6. Peel pumpkin skin, cut to big pieces with 5mm thickness. Steam until cooked. Leave cool and pat dry. Sprinkle little corn starch and pan fry both sides until golden.
  7. Cut bread into half, put on parma ham, sprinkle little dark and/or chili powder (optional), cheese and pan-fried pumpkin. The heat from pumpkin makes the cheese partially melt. This makes the burger super yum!!
