Orange Peels | 蜜餞橙皮



Ingredients | 材料 : 
    180g  Orange peels, net of white flesh | 已除白瓤橙皮粒
      90g  Caster sugar (or raw sugar) | 砂糖或原糖

    1. 去除橙皮白瓤,橙皮切丁粒,飛水數分鐘,隔去水份。
    2. 糖放鍋內,開中火待糖的顏色轉深啡色,加入已飛水橙皮,中途用矽膠刮刀或木煮食棒繞圈攪勻,直至糖完全被橙皮吸收(約5~7分鐘,視乎橙皮量多少,適當調節)。
    3. 放上牛油紙待冷,冷後存放雪櫃

    1. Cut away the white flesh of the orange skin, cut into very small pieces, boil in water for few minutes, drain.
    2. In a pot, put in sugar in medium heat until sugar turns dark brown, fold in peels, stir periodically with a scraper or wooden cooking stick. Cook until sugar syrup is completely absorbed by the peels, takes 5~7 minutes depending on volume of peels, need adapt personally.
    3. Lay the peels on a baking paper, let cool, and put in fridge.

    *Note | 心得 :

    • 一次做幾個橙皮,可省回時間
    • 存放: 最好將做好的份量分成若干小包存放雪櫃,做完一包再開新的。可存放雪櫃三個月。
    • Storage: best to separate the volume into several small bags and fridge. When one bag is used up, then open the second one. Keep in fridge up to 3 months.
