Apple Fillings | 蘋果餡




Ingredients | 材料 : 
  • 1 portion fillings | 1份饀料
(A)
250g  Apple, thinly sliced | 蘋果肉,切小丁
  10g  Unsalted butter | 無鹽牛油
  50g  Raw sugar | 原糖
1 teaspoon Lemon juice | 檸檬汁 1茶匙
1 tablespoon Rum or brandy, optional | 朗姆酒 (或白蘭地) 1湯匙(可選)
1/4 teaspoon Salt | 幼鹽 1/4茶匙
1/4 teaspoon Cinnamon powder | 肉桂粉 1/4茶匙


(B)
  20g  Water | 水
  10g  Corn starch | 粟米粉
Mix the above together | 調勻備用

  • Above ingredients good for 1 apple pie fillings.
  • 以上可做1個6吋批饀料

  1. 蘋果去皮去核切小丁,重量約250g。

  2. 鍋燒熱放入10g牛油

  3. 牛油溶化後放入蘋果丁翻炒約兩分鐘。

  4. 稍翻炒後放入糖,繼續翻炒。

  5. 加糖後的果丁會滲出大量水份,轉小火,蘋果丁煮軟後,把粟米粉和水調勻倒入鍋中,翻炒至餡料濃稠。關火,倒入檸檬汁、幼鹽和肉桂粉,調勻。

  6. 做好批料放碟中放涼備用。


  1. Cut apple into small cubes and get about 250g. 

  2. Heat up butter till it melts.

  3. Fold in apple, stir fry for about 2 minutes. 

  4. Fold in sugar, stir fry. 

  5. Water will come out after adding sugar, turn to low heat and cook for a minute or 2. Fold in corn starch water from (B), mix well. Off heat. Fold in lemon juice, salt and cinnamon powder, mix well. 

  6. Let cool for use.
